Fried Plantain with Tomato Pepper Sauce

INGREDIENTS:

For the plantains:

  • 6 plantains

  • Frying Oil

INSTRUCTIONS:

  1. Peel and slice the plantains

  2. Heat the frying oil, once it’s very hot, place the plantain slices in it, taking care not to overlap them to prevent them from sticking together

  3. Once cooked, place the plantains onto an absorbent paper.

For the tomato sauce:

  • 4 onions

  • 3 tablespoons of concentrated tomatoes

  • 2 tomatoes

  • 90 ml of oil

  • 1 bouillon cube

  • 2 garlic cloves, crushed

  • 1 teaspoon of chili power

  • 100 ml of water

  • salt

  • pepper

  • Frying Oil


***NOTE***
Please feel free to use your preferred oil to fry

INSTRUCTIONS:

  1. Heat oil in frying pan and brown the diced onions. Add garlic, diced tomatoes, cook for about 2 minutes

  2. Add the concentrated tomato and finish with the seasoning. Leave to cook and after 10 minutes, add a touch of water to simmer.

  3. The sauce is ready when the tomato is cooked and a little oil comes to the surface.

  4. Serve hot and enjoy!
